Back in the olden days in Russia, the whole village would get together for a pig-butchering party and then divvy up the meat for sausage, which they smoked by hanging it in their living-room chimneys. After the butchering, they’d hang around and drink. Some of these old traditions have been lost—Mennonite farmer’s sausage that’s on the market today still has a unique tanginess, but it’s not from being hung through the winter in our personal fireplaces.
