Ontario Wheat Thins

A fun snack for family gatherings and long weekends.
Course Appetizer

Ingredients

  • 5 cups Ontario whole wheat flour
  • 1 1/2 cups water
  • 1/2 cup butter
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon flavouring optional – paprika, garlic powder, black pepper, or rosemary
  • additional salt for topping optional

Instructions

  • Combine dry ingredients.
  • Cut butter into small pieces and mix in with your fingers until dough has a smooth texture.
  • Roll thin and cut into small squares.
  • Prick each cracker with a fork and sprinkle salt if desired.
  • Bake at 350 for 5-8 minutes or until brown and crisp.
  • Serve with your favorite Ontario cheese and smoked meat for a great party platter to share with your family and friends during the long weekend!

 

Barley and Black Bean Burgers

These burgers are a different spin on your favourite barbeque foods. Barley is high in fiber, iron and beta glucans, a type of carbohydrate shown to decrease levels of saturated fats in the bloodstream and is linked with lowering the risk of heart disease.

Ingredients

  • Can of black beans or ½ cup dried black beans, soaked overnight and boiled until soft
  • 1/4 cup dried pearl barley soaked overnight and cooked on the stove
  • 1/4 green onion chopped fine
  • 1/3 cup carrots diced fine
  • 1/2 cup leafy greens tougher greens like kale work best
  • 2 tbsp bread crumbs
  • 1 tbsp olive oil

Instructions

  • Soak the barley (and black beans, if you’re using the dried varietovernight and cook them on the stove.
  • Sauté leafy greens, green onion, and carrots in the olive oil in a pan. Once everything is cooked, turn off the heat and set it aside.
  • Process the black beans in a food processor first – then, add the barley until everything is mixed through.
  • Add the cooked vegetables and bread crumbs to the food processor and pulse until it is completely incorporated. Season the mix with salt and pepper to taste.
  • Form patties with the mix. If you want to cook them fresh, pan fry them until both sides are brown and finish heating through in an oven for about 15 minutes. If you want to cook them on the barbecue, it works best if you freeze the patties first.

 

Raspberry Oatmeal Bars

Looking for a tasty treat to bring to that barbecue or picnic this summer? Try these Raspberry Oatmeal Bars made from delicious and nutritious Ontario oats! Oats have many environmental and health benefits. Ontario grain farmers will plant oats as a cover crop to protect their soil’s health and oats are high in fiber and has been linked in reducing the risk of heart disease and diabetes.

Ingredients

  • 1/2 cup unsalted butter melted
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 3/4 cup whole-rolled oats
  • Pinch salt optional and to taste
  • 12 ounces approx. raspberry preserves

Instructions

  • Preheat oven to 350Line an 8-inch square pan with aluminum foil and cooking spray.
  • In a large bowl, add melted butter, sugars, vanilla, and whisk to combine.
  • Add the flour, oats, optional salt, and stir to combine.
  • Set 1 cup of mixture aside for the crumble topping.
  • Put the remaining mixture in the prepared pan. Pack the mixture to create an even, flat crust.
  • Evenly spread the raspberry preserves over the crust. Preserves should be 1/8-inch to 1/4-inch thick.
  • Sprinkle the 1 cup of crumble topping mixture onto the preserves.
  • Bake for about 30 to 32 minutes or until edges are set and it is lightly golden browned.
  • Allow to cool before serving.
