Cornbread Muffins with Chives
Enjoy these savoury muffins with soups, stews, salads or chili!
Servings 10 muffins
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 Tbsp baking powder
- 1/8 tsp cayenne pepper
- 3 Tbsp sugar
- 1 egg beaten
- 1 cup buttermilk
- 3 Tbsp oil
- 2 Tbsp minced chives
Instructions
- Preheat oven to 400 degrees F.
- In a bowl, combine the cornmeal, flour, baking powder, cayenne pepper and sugar. Stir in the minced chives.
- In a separate bowl, stir together the egg, buttermilk and oil.
- Add the egg mixture to the dry ingredients. Stir until combined.
- Pour into muffin tins. Bake for 15 minutes or until done. Cool on a rack. Store muffins in an air-tight container.

Nut Free Soy Energy Bites
Soybeans are high in protein which is great for last all day energy and to help build muscles. These snacks are perfect for an after work out or healthy school or lunch snack. And, using soy butter instead of a nut butter means these are nut free and school friendly!
Servings 24 energy bites
Ingredients
- 1 cup oatmeal large flake or quick cooking
- ½ cup soybutter such as Wow Butter
- ¼ cup ground flaxseeds
- ¼ cup liquid honey
- ½ cup coarsely chopped dried cranberries or ½ cup raisins
- ¼ cup coarsely chopped pumpkin seeds or ¼ cup sunflower seeds
- 1 tsp vanilla
Instructions
- In a large bowl, mix together soybutter, honey, and vanilla.
- Stir in all of the remaining ingredients. Stir well to combine.
- Shape into small balls (approximately 1″ in diameter).
