Toasted Hummus and Burrata Crostini

Ingredients

  • 227g Summer Fresh Original or Roasted Red Pepper Hummus
  • Baguette loaf
  • 8 2 ounce Mini Burrata Cheese
  • 8 Cherry Tomatoes Sliced
  • 1/2 cup Pine Nuts
  • 2 tbsp Fresh Basil
  • 3 tbsp Olive Oil
  • Fresh cracked black pepper to finish

Instructions

Slice baguette into 12-1-inch round on the bias slices. Lay slices on baking tray brush with olive oil, place in oven on broil for 1-2 minutes just to crisp up slightly. Remove from oven and let cool, once cooled spread on Summer Fresh Original Hummus. Slice cheese into two slices, cut the cherry tomatoes in half. Place cheese slice on top of hummus with sliced cherry tomato. Place crostini back in the oven and bake until cheese is soft (Approx. 2-3 minutes). Remove from oven and finish with pine nuts, basil and cracked black pepper to taste. Serve and Enjoy!
