“I felt it was important to write The Complete Plate after receiving a life changing diagnosis in 2013,” says author Lauren Klukas. “My new reality resulted in not being allowed to exercise for the rest of my life. I felt like I had already given up so much and I was not ready to also give up the foods that I love. I wanted to show that all foods can fit into a balanced healthy diet. You can still enjoy chocolate and cheese just in proper portion sizes!”

Coconut and Flaxseed French Toast
Ingredients
- 1 egg
- 1 Tbsp vanilla Greek yogurt
- 1 Tbsp shredded coconut unsweetened
- 1½ tsp flaxseeds
- 1 tsp vanilla extract
- 1 tsp coconut oil
- 2 slices whole grain loaf
- ¼ cup blackberries
- ½ cup blueberries
- ½ cup raspberries
- Pure maple syrup
Instructions
- In a medium shallow bowl, whisk together egg(s), yogurt, coconut, flaxseeds, and vanilla.
- Melt coconut oil in a skillet over medium-low heat. Dip bread into egg mixture until saturated on both sides. Place bread in skillet and cook for 2–3 minutes, until golden. Flip and cook for another 2–3 minutes.
- Top with berries and maple syrup.
