Yummy Salmon Bites

Yummy Salmon Bites

Servings 12 bites

Ingredients

  • 2 5 to 6 oz. cans salmon
  • 2 tbsp mayonnaise
  • 2 tbsp plain Greek yogurt
  • 1 ⁄2 cup chopped onions green
  • onions or chives
  • 1 ⁄2 cup seeded and finely chopped
  • red or yellow bell pepper
  • 1 ⁄2 cup whole grain panko
  • crunchy breadcrumbs
  • 1 to 2 tbsp olive oil

Instructions

  • In a large bowl, mash the salmon with mayonnaise and yogurt. Add the onions, peppers, and breadcrumbs. Stir to combine.
  • Use a tablespoon to scoop up 1 to 2 spoonfuls of the salmon mixture, and shape it into a flat bite-size pieces with your hands. Repeat to make all 12 bites (if you want to make burgers, use 3 to 4 tablespoons for each).
  • 3.Place a nonstick skillet over medium heat and heat 1 tablespoon of the oil.
  • Fry the bites until browned, about 3 minutes per side, adding more oil to the skillet as needed (if making burgers, cook for an extra minute per side).
  • Serve with dipping sauce or on mini slider buns. Store salmon bites in the fridge for up to 3 days.
