Yummy Salmon Bites
- 2 5 to 6 oz. cans salmon
- 2 tbsp mayonnaise
- 2 tbsp plain Greek yogurt
- 1 ⁄2 cup chopped onions green
- onions or chives
- 1 ⁄2 cup seeded and finely chopped
- red or yellow bell pepper
- 1 ⁄2 cup whole grain panko
- crunchy breadcrumbs
- 1 to 2 tbsp olive oil
In a large bowl, mash the salmon with mayonnaise and yogurt. Add the onions, peppers, and breadcrumbs. Stir to combine.
Use a tablespoon to scoop up 1 to 2 spoonfuls of the salmon mixture, and shape it into a flat bite-size pieces with your hands. Repeat to make all 12 bites (if you want to make burgers, use 3 to 4 tablespoons for each).
3.Place a nonstick skillet over medium heat and heat 1 tablespoon of the oil.
Fry the bites until browned, about 3 minutes per side, adding more oil to the skillet as needed (if making burgers, cook for an extra minute per side).
Serve with dipping sauce or on mini slider buns. Store salmon bites in the fridge for up to 3 days.
