Ruthie’s Cheesecake Squares

 This Cheesecake Squares recipe is from 2021 Taste Canada Hall of Fame Honoree Bonnie Stern. “These little cheesecake squares are the ones my mom used to make for every occasion,” says Bonnie. “They are always perfect for parties, tea, snacks, dessert and even breakfast. Serve as is or with berries, grated chocolate or sprinkles.

Ruthie's Cheese Cake Squares

Ingredients

Crumb Crust:

  • 1 1/2 cups graham wafer crumbs
  • 1/4 cup butter melted

Filling:

  • 1 lb cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract

Topping:

  • 1 1/4 cups sour cream
  • 2 tbsp icing sugar

Instructions

  • Preheat oven to 350F. Butter an 8” square baking pan and line with parchment paper, hanging over a little on two sides for easy removal. (Especially if you are cutting the cake into small squares it is easier to cut when the cake is removed from the pan.)
  • For the crust, combine graham wafer crumbs with butter and press into pan.
  • For the filling beat cheese with sugar until light. Beat in eggs and vanilla until smooth. Pour evenly over crust. Bake 30 to 35 minutes until set in the middle.
  • For topping combine sour cream with 1 tbsp icing sugar and vanilla. When cake is ready, smooth sour cream over the hot cake and return to oven for 5 minutes just to set. Cool cake on rack and then refrigerate at least 4 hours to overnight.
  • Serve from pan or remove from pan to cut into squares. Run a knife around the two sides not lined with parchment paper and gently lift cake out of the pan using the parchment paper ends to help. Trim edges and eat (chef's treat). Cut into squares with a knife dipped into very hot water and dried between cuts.
  • Makes 25 squares
