Coconut and Flaxseed French Toast

Ingredients

  • 1 egg
  • 1 Tbsp vanilla Greek yogurt
  • 1 Tbsp shredded coconut unsweetened
  • tsp flaxseeds
  • 1 tsp vanilla extract
  • 1 tsp coconut oil
  • 2 slices whole grain loaf
  • ¼ cup blackberries
  • ½ cup blueberries
  • ½ cup raspberries
  • Pure maple syrup

Instructions

  • In a medium shallow bowl, whisk together egg(s), yogurt, coconut, flaxseeds, and vanilla.
  • Melt coconut oil in a skillet over medium-low heat. Dip bread into egg mixture until saturated on both sides. Place bread in skillet and cook for 2–3 minutes, until golden. Flip and cook for another 2–3 minutes.
  • Top with berries and maple syrup.
